Indian cuisine over the centuries has been influenced by the invasion and occupation of the Moguls, the Portuguese, the French and the British making it the most complex and exotic cuisine. Its always been my philosophy to combine locally available meats, seafood and produce while using classical Indian recipes and cooking techniques, while not being afraid to be creative.
